4 -large tuna or swordfish steaks1 -onion diced
1 -clove garlic chopped
1 -table spoon thyme
½ -cup lime juice
½ -tablespoon salt
½ -teaspoon brown sugar
½ -cup heavy cream
¼ -cup Caribbean jerk seasoning
3 -large avocados
Avocado sauce:
In a food processor add the onion, garlic, salt, sugar, lime juice. Peel and seed the
avocado, add to the processor and puree. Warm lightly in a saucepan and add the thyme, and
slowly add the cream. Sauce should be lightly warm, or can be served cold.
Tuna: Rub the steaks liberally with the jerk seasoning and grill until light
pink in the center. Ladle the avocado sauce on a plate and set the fish on top and serve.
