4 -12oz. Center-cut pork chopsMarinade
2 -cups fresh orange juice
½ -cup teriyaki sauce
2 -tablespoons minced garlic
1 -table spoon salt
1 -teaspoon black pepper
1 -cup rum
Mango barbecue sauce
1 -large mango, peeled and diced
1 -cup fresh orange juice
2 -tablespoons Caribbean jerk seasoning
¾ -teaspoon salt
1 -tablespoon hot sauce
Place pork chops in marinade and refrigerate for 24 hours or over night.
Barbecue sauce: place ingredients in a food processor or blender and puree
until smooth.
Grill pork chops to desired temperature. Cover bottom of plate with the
barbecue sauce and serve each cop on the sauce.
