SANTA FE  GRILLED STEAK

This spice rub only takes a minute to prepare, will seal in the juices and will add a whole new dimension to your charcoal grilled steak. The flavor of the Southwest for your summer barbecue.

2 -New York strips (8 or 10 oz.) or sirloin strips

2 -tablespoons chili powder

2 -tablespoons paprika

1 -tablespoon ground cumin

1 -tablespoon ground cinnamon

1 -teaspoon garlic powder

1 -teaspoon onion powder

˝ -teaspoon salt

˝ -teaspoon black pepper

˝ -teaspoon cayenne pepper

Spray cooking oil

Mesquite chips

  1. Combine spices ingredients in a bowl and mix well.
  2. Rub spices all over steaks coat well. Cover and marinate in refrigerator at least 4 hours.
  3. Prepare grill. Add mesquite chip to center of coals.
  4. Spray grill with oil. Spray the marinated steaks with a little oil. Cover and grill about 4 minutes on each side or until desired doneness. Serve hot with oven roasted onion rings or a cool corn salad.
