Grilled Shrimp w/ Ginger Pineapple

24 –large shrimp, deveined

2-tablespoons peanut oil or olive oil

1-onion minced fine

½ cup orange juice

4-tablespoons soy sauce

4-tablespoons minced fresh garlic (skin removed) or powdered ginger

  1. large pineapple peeled and quartered or canned rings

¼-cup honey

1. Mix together in a sauce pan the orange juice, onion, ginger and soy sauce. 

2. Let it come to a boil and reduce slightly. Stir in the honey keep stirring until a light glaze is formed and remove from heat. 

3. Light grill. 

4. Prepare shrimp. You can use skewers or use a screen to keep shrimp from falling through the grates. Put pineapple on grill. Brush both with ginger glaze. Keep applying glaze until shrimp is done, about 5 minutes. 

Serve with rice and scallions.
