CARAMELIZED ONION AND GORGONZOLA

 

Crostini Toast

1-medium baguette (cut into thirty-two, ¼ inch slices) ¼ cup olive oil, for brushing

Preheat oven to 350°. Arrange the bread slices on 2 large baking sheets and brush olive oil on both sides. Bake about 7 minutes, or until golden brown. Let cool completely. The crustini can be made several days ahead and stored in an airtight container.

 

Caramelized onion and Gorgonzola 
2- large sweet onions (thinly sliced) 
4 tablespoons olive oil 
¼ cup water 
4- oz Gorgonzola or blue cheese

In a sauté pan add olive oil and onions. Cook on medium heat. Sprinkle with a little salt. Cook for about 8 minutes or until it begins to brown. Add water and a dash of sugar and cook until water has evaporated and the onion has caramelized. Let cool. Preheat oven to 350° arrange the crustini on a baking sheet. Top the toast with a little onion and then a small piece of Gorgonzola or blue cheese on top. Bake for about 4 minutes or until cheese has slightly melted.
