MOROCCAN CASSEROLE
- 1 pound turkey sausage
- 1 pound red-skin
potatoes (sliced ˝ inch thick)
- 3 large sweet peppers
(red and yellow bell peppers)
- 1 large red or white
sweet onion (sliced)
- 1 can chopped tomatoes
(drained)
- 2 tablespoons paprika
- 4 tablespoons curry
power
- ˝ tablespoon cumin
- ˝ tablespoon cinnamon
- ˝ tablespoon garlic powder
- 1 teaspoon pepper
- 2 tablespoons sugar
- 2 tablespoons olive
oil
- In a skillet sauté the turkey sausage and onion slices till just under done.
- Add 1 cup of water and all of the spices. Bring to a slight boil and remove.
- Layer the sliced potatoes and sliced sweet peppers in a baking dish.
- Pour the sausage mixture over the potatoes.
- Top with the drained chopped tomatoes.
- Drizzle a little olive oil over the tomatoes.
- Sprinkle a little more curry over the tomatoes.
- Sprinkle a little sugar over the tomatoes and cover with foil.
- Bake for 35 minutes, at 400° remove foil and bake
For 20 to 30
minutes more. Serve warm. |
