MOROCCAN  CASSEROLE

 
  • 1            pound turkey sausage
  • 1            pound red-skin potatoes (sliced ˝ inch thick)
  • 3            large sweet peppers (red and yellow bell peppers)
  • 1            large red or white sweet onion (sliced)
  • 1            can chopped tomatoes (drained)
  • 2            tablespoons paprika
  • 4            tablespoons curry power
  • ˝           tablespoon cumin
  • ˝           tablespoon cinnamon
  • ˝           tablespoon garlic powder
  • 1            teaspoon pepper
  • 2            tablespoons sugar
  • 2            tablespoons olive oil

 

  1. In a skillet sauté the turkey sausage and onion slices till just under done.
  2. Add 1 cup of water and all of the spices. Bring to a slight boil and remove.
  3. Layer the sliced potatoes and sliced sweet peppers in a baking dish.
  4. Pour the sausage mixture over the potatoes.
  5. Top with the drained chopped tomatoes.
  6. Drizzle a little olive oil over the tomatoes.
  7. Sprinkle a little more curry over the tomatoes.
  8. Sprinkle a little sugar over the tomatoes and cover with foil.
  9. Bake for 35 minutes, at 400° remove foil and bake

             For 20 to 30 minutes more. Serve warm.
